Ingredients:
- 1 large ripe avocado – halved, pitted, and scooped
- 1 cup honeydew melon chunks
- 1/2 lime juiced
- 1 cup fat-free milk or almond milk
- 1 cup fat-free plain yogurt
- 1/2 cup 100% apple juice or white grape juice
- 1/2 tbsp honey
Instructions:
- Cut the avocado in half and remove the pit.
- Scoop out the flesh with a spoon and place it in the blender.
- Add the honeydew melon chunks, lime juice, milk, yogurt, apple juice (or white grape juice), and honey to the blender.
- Pour into glasses and serve chilled. (Keeps well in the refrigerator for up to 24 hours. If preparing ahead, stir gently before pouring into glasses.)
Notes:
- Dairy-Free Alternative: Use almond milk, oat milk, or coconut yogurt instead of dairy.
- Extra Fiber: Add 1 tbsp ground flaxseeds or chia seeds for an extra fiber boost.
