Baked Stuffed Zucchini Boats

Ingredients:

  • 4 medium zucchini, halved lengthwise

  • 1 cup canned diced tomatoes, drained (no salt added preferred)
  • ½ cup yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp cumin
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ¼ cup part-skim mozzarella, shredded (optional)
  • Fresh basil or parsley for serving

Instructions:

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Halve the zucchini lengthwise. Use a spoon to scoop out the center flesh, leaving a ¼-inch shell. Reserve the scooped flesh and chop it.
  3. Place zucchini shells cut-side up on the baking sheet. Brush lightly with olive oil. Bake for 10 minutes to pre-soften.
  4. Meanwhile, heat olive oil in a skillet over medium heat. Sauté onion 3–4 minutes until softened. Add garlic and cook 1 minute more.
  5. Add ground turkey, breaking up with a spoon. Cook 6–8 minutes until browned. Add chopped zucchini flesh, diced tomatoes, Italian seasoning, cumin, salt, and pepper. Stir to combine and cook 3–4 minutes more.
  6. Remove zucchini shells from oven. Fill each boat generously with the turkey mixture. Top with shredded mozzarella if using.
  7. Return to oven and bake 15–18 minutes until filling is set and cheese (if using) is golden. Finish under the broiler for 2 minutes for added color.
  8. Garnish with fresh basil or parsley. Serve immediately.

  • Skip the cheese to reduce saturated fat and sodium — the filling is fully satisfying on its own.
  • Renal note: Use no-salt-added tomatoes and omit cheese to reduce sodium and phosphorus. Zucchini is a renal-friendly vegetable with moderate potassium.
