Ingredients:
- 4 medium zucchini, halved lengthwise

- 1 tsp Italian seasoning

- ¼ tsp black pepper
- ¼ tsp salt
- ¼ cup part-skim mozzarella, shredded (optional)

Instructions:
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Halve the zucchini lengthwise. Use a spoon to scoop out the center flesh, leaving a ¼-inch shell. Reserve the scooped flesh and chop it.
- Place zucchini shells cut-side up on the baking sheet. Brush lightly with olive oil. Bake for 10 minutes to pre-soften.
- Meanwhile, heat olive oil in a skillet over medium heat. Sauté onion 3–4 minutes until softened. Add garlic and cook 1 minute more.
- Add ground turkey, breaking up with a spoon. Cook 6–8 minutes until browned. Add chopped zucchini flesh, diced tomatoes, Italian seasoning, cumin, salt, and pepper. Stir to combine and cook 3–4 minutes more.
- Remove zucchini shells from oven. Fill each boat generously with the turkey mixture. Top with shredded mozzarella if using.
- Return to oven and bake 15–18 minutes until filling is set and cheese (if using) is golden. Finish under the broiler for 2 minutes for added color.
- Garnish with fresh basil or parsley. Serve immediately.
