Bruschetta Grilled Chicken
Ingredients:
- 4 Tbsp. extra-virgin olive oil
- Juice of 1 lemon, divided
- Kosher salt
- Freshly ground black pepper
- 1 tsp. Italian seasoning or dried oregano
- 4 boneless, skinless chicken breasts, pounded to even thickness
- 3 slicing tomatoes, chopped
- 2 cloves garlic, minced
- 1 Tbsp. freshly chopped basil
- 4 slices mozzarella cheese
- Freshly grated Parmesan cheese, for serving
Directions:
Step 1: Marinate the Chicken
- In a small bowl, whisk together olive oil, half of the lemon juice, 1 teaspoon salt, 1/4 teaspoon pepper, and Italian seasoning (or oregano).
- Transfer the marinade to a large re-sealable plastic bag. Add the pounded chicken breasts, seal the bag, and refrigerate for 30 minutes.
Step 2: Grill the Chicken
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade, discarding any excess marinade.
- Grill the chicken breasts until they are charred and reach an internal temperature of 155°-160°F, about 5 to 7 minutes per side.
Step 3: Prepare the Caprese Topping
- In a bowl, combine chopped tomatoes, minced garlic, freshly chopped basil, and the remaining lemon juice.
- Season the tomato mixture with salt and pepper to taste.
Step 4: Finish the Dish
- While the chicken is still on the grill, top each breast with a slice of mozzarella cheese.
- Cover the grill and cook for an additional 2 to 3 minutes, or until the cheese is melted.
- Remove the chicken from the grill and top each breast with the prepared tomato mixture.
Step 5: Serve
- Garnish the grilled chicken with freshly grated Parmesan cheese.
