Canned Chicken & White Bean Skillet with Spinach

Why This Recipe Works

  • Canned chicken is real protein without the prep. A drained can delivers roughly 25 grams of protein with almost no active cooking time, which matters on nights when a full meal still needs to happen fast.
  • White beans bring fiber that canned chicken doesn't have on its own. Mashing a portion of them into the pan sauce creates a creamy texture without cream, while the fiber slows how quickly the meal affects blood sugar.
  • This is a genuine one-skillet dinner. Everything cooks in the same pan in under 20 minutes, which keeps cleanup short and makes it realistic to repeat on a weeknight without it feeling like a chore.

Ingredients:

  • 2 cans (12.5 oz each) chicken breast, drained and rinsed well
  • 1 can (15 oz) low-sodium white beans (cannellini), drained and rinsed
  • 5 oz baby spinach
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ cup low-sodium chicken broth
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Pinch of red pepper flakes (optional)
  • Grated Parmesan, for serving (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add the onion and cook 4 minutes, until softened.
  2. Add the garlic and cook 1 minute until fragrant.
  3. Add the white beans, broth, and oregano. Simmer 3 minutes, using the back of a spoon to mash about a third of the beans for a creamy texture.
  4. Add the spinach in batches, stirring until wilted, about 2 minutes.
  5. Fold in the chicken and warm through, about 3 minutes.
  6. Stir in the lemon juice, season with salt, pepper, and red pepper flakes if using.
  7. Serve as-is or over rice, topped with Parmesan if desired.

Notes & Substitutions:

  • Renal note: Rinse canned chicken well to cut sodium, and reduce beans to ¼ cup per serving, adding extra spinach to keep the portion filling. See metadata block above for full guidance.
  • Protein swap: Canned tuna or canned salmon works the same way if you want variety week to week.
  • Storage: Keeps in the refrigerator up to 3 days. Reheat gently in a skillet with a splash of broth so it doesn't dry out.
