Why This Recipe Works
- Olive oil replaces butter and makes the cake genuinely heart-friendlier. Unlike butter, extra-virgin olive oil is high in monounsaturated fats — the kind that support healthy cholesterol levels over time. It also keeps the cake moist longer than butter would, so there's no need to add extra sugar or fat to compensate.
- Fresh orange brings natural sweetness and more than just flavor. The orange zest contains compounds that give the cake its fragrance, while the juice adds moisture and a mild tartness that keeps the sweetness from feeling heavy. Citrus is also a good source of vitamin C and antioxidants that support cardiovascular health.
- The recipe is forgiving and flexible. There's no creaming butter or fussing with temperature-sensitive ingredients — just whisk wet into dry and pour. It works with whole wheat pastry flour for added fiber, and it's delicious at room temperature straight from the pan, no frosting required.
Ingredients:
- 1½ cups all-purpose flour (or whole wheat pastry flour for added fiber)
- ¾ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 3 large eggs
- ½ cup extra-virgin olive oil
- ½ cup plain low-fat yogurt (or unsweetened almond milk)
- Zest of 2 medium oranges (about 2 tablespoons)
- ¼ cup fresh orange juice (about 1 orange)
- 1 teaspoon vanilla extract
- Optional: powdered sugar for dusting, or a light orange glaze (2 tablespoons powdered sugar + 1 tablespoon orange juice)
Instructions:
- Preheat oven to 350°F. Lightly grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the eggs, olive oil, yogurt, orange zest, orange juice, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined — a few small lumps are fine. Do not overmix.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 38–42 minutes, until a toothpick inserted in the center comes out clean and the top is golden.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar before serving, or drizzle with the optional orange glaze.
Notes & Substitutions:
- Renal note: Reduce fresh orange juice to 2 tablespoons and substitute unsweetened apple juice for the remainder if your care team has recommended limiting citrus. Keep portions to one slice.
- Gluten-free option: Use a 1:1 gluten-free baking flour blend. Texture may be slightly denser.
- Make it dairy-free: Use unsweetened almond or oat milk in place of the yogurt. The crumb will be slightly lighter.
- Add texture: Fold in ¼ cup of sliced almonds or fold the batter over a thin layer of orange slices arranged in the pan bottom for a rustic look.
- Storage: Store covered at room temperature for up to 3 days, or refrigerate for up to 5 days. The flavor deepens overnight.
