Why This Recipe Works
- Oats are a whole grain that supports heart health. The fiber in oats has been linked to healthier cholesterol levels, and cooking them low and slow brings out a naturally creamy texture without needing added cream.
- Peanut butter adds protein and healthy fat that help the meal hold you over. Stirred in at the end, it turns simple oatmeal into a more balanced breakfast that keeps you full past mid-morning.
- Apple brings sweetness and fiber without any added sugar doing the work. Cooked right in the oats, it softens into little pockets of natural sweetness throughout the bowl.
Ingredients:
- 1 cup rolled oats
- 2 cups shelf-stable milk
- 1 apple, cored and diced
- 2 tablespoons peanut butter
- ½ teaspoon cinnamon
- Pinch of salt
Instructions:
- In a saucepan, combine the oats, milk, and a pinch of salt. Bring to a gentle boil over medium heat.
- Reduce the heat and simmer for 5 minutes, stirring occasionally.
- Stir in the diced apple and cinnamon. Cook for 2 more minutes, until the apple softens slightly.
- Remove from heat and swirl in the peanut butter.
- Serve warm, with a splash of extra milk if you’d like it looser.
Notes & Substitutions:
- Renal note: This recipe works well as written for most kidney-friendly diets. Check with your RDN if you have specific limits. - Substitution: no apple on hand? Diced pear works the same way.
- Storage: Keeps in the fridge for up to 3 days; reheat with a splash of milk to loosen it back up.
