Peanut Butter Carrot Oat Bites

Grated carrot adds a vegetable without anyone noticing. It brings natural sweetness and a little extra fiber, which means you need less added honey to make these taste good.

No-bake means no extra dishes or waiting around. Everything mixes in one bowl, and a short chill in the fridge is all it takes to firm them up.

Ingredients:

  • 1 cup rolled oats
  • ½ cup peanut butter
  • ⅓ cup grated carrot (about 1 medium carrot), patted dry
  • 3 tablespoons honey
  • 2 tablespoons shelf-stable milk
  • ½ teaspoon cinnamon
  • Pinch of salt

Instructions:

  1. Grate the carrot and press it between paper towels to remove extra moisture.
  2. In a large bowl, mix the peanut butter, honey, and shelf-stable milk until smooth.
  3. Stir in the oats, grated carrot, cinnamon, and salt until well combined.
  4. Chill the mixture in the fridge for 15 minutes to firm up.
  5. Roll into small balls, about 1 tablespoon each.
  6. Store in the fridge until ready to eat.
