Ingredients:
- 1-2 lbs lean ground beef (90/10)
- 1 red bell pepper thinly sliced
- 1 green bell pepper thinly sliced
- 1 yellow onion thinly sliced
- 3 garlic cloves minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1½ tsp dried Italian seasoning
- 1 tsp paprika
- 3-4 cups fresh cauliflower rice
- 8 oz reduced-fat cream cheese
- 6 slices provolone cheese
Instructions:
- Preheat oven to 350°F
- Heat a large oven-safe skillet over medium-to-medium high heat. Add lean ground beef, bell peppers, onion, and garlic. Cook for 9-10 minutes, breaking up the beef during browning.
- Reduce the heat to low and stir in salt, pepper, Italian seasoning, and paprika.
- Add cauliflower rice and mix. Then add cream cheese, stirring until fully mixed with the ground beef, cauliflower and pepper mixture.
- Top with provolone cheese slices. Make sure the casserole is fully covered.
- Transfer the oven safe skillet to the oven and bake for 10-12 minutes, or until cheese is bubbly.
- Remove from the oven. Let stand for 10 minutes before serving.
