Citrus Avocado Breakfast Tacos

Ingredients:

  • 4 small whole-grain tostadas or toasted corn tortillas
  • 2 ripe avocados, sliced
  • 1 orange or grapefruit, segmented
  • ¼ red onion, thinly sliced
  • 1 tablespoon olive oil
  • Juice of ½ lime
  • Salt and black pepper, to taste
  • Optional: crumbled queso fresco or a cooked egg for added protein

Instructions:

  1. Lightly warm the tostadas if desired and place them on serving plates.
  2. Divide avocado slices evenly across each tostada.
  3. Top with citrus segments and red onion.
  4. Drizzle with olive oil and lime juice.
  5. Season lightly with salt and black pepper.
  6. Add optional egg or cheese before serving, if using.

Notes & Substitutions:

  • Vegetarian by default
  • Add beans or eggs for extra protein
  • Swap tostadas for whole-grain toast if preferred
  • For a milder flavor, soak sliced onion in water for 5 minutes before using
