Ingredients:
- 4 small whole-grain tostadas or toasted corn tortillas
- 2 ripe avocados, sliced
- 1 orange or grapefruit, segmented
- ¼ red onion, thinly sliced
- 1 tablespoon olive oil
- Juice of ½ lime
- Salt and black pepper, to taste
- Optional: crumbled queso fresco or a cooked egg for added protein
Instructions:
- Lightly warm the tostadas if desired and place them on serving plates.
- Divide avocado slices evenly across each tostada.
- Top with citrus segments and red onion.
- Drizzle with olive oil and lime juice.
- Season lightly with salt and black pepper.
- Add optional egg or cheese before serving, if using.
