Why This Recipe Works

Ingredients:
- 1 head cauliflower, cut into florets
- 2 carrots, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- ½ teaspoon ground ginger (or 1 teaspoon fresh, grated)
- 1 tablespoon olive oil
- 3 cups low-sodium vegetable or chicken broth
- 1 cup shelf-stable milk
- Salt and black pepper to taste
- Optional: fresh cilantro for topping
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 3–4 minutes, until softened.
- Add the curry powder and ginger and cook for 1 minute, stirring, until fragrant.
- Add the cauliflower, carrots, and broth. Bring to a boil, then reduce heat and simmer for 15–18 minutes, until the vegetables are very tender.
- Blend the soup until smooth, using an immersion blender or working in batches in a regular blender.
- Stir in the shelf-stable milk and warm through. Season with salt and pepper.
- Serve topped with fresh cilantro if using.

- Substitutions: no curry powder? A mix of ½ teaspoon turmeric and ½ teaspoon cumin works in a pinch.
