This soup blends both vegetables down into something smooth and comforting, with curry powder and ginger giving it a gentle warmth without much heat. A splash of shelf-stable milk at the end makes it creamy without needing heavy cream. It’s the kind of lunch that feels like it’s doing something good for you, because it is.

Ingredients:

  • 1 head cauliflower, cut into florets
  • 2 carrots, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • ½ teaspoon ground ginger (or 1 teaspoon fresh, grated)
  • 1 tablespoon olive oil
  • 3 cups low-sodium vegetable or chicken broth
  • 1 cup shelf-stable milk
  • Salt and black pepper to taste
  • Optional: fresh cilantro for topping

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for 3–4 minutes, until softened.
  2. Add the curry powder and ginger and cook for 1 minute, stirring, until fragrant.
  3. Add the cauliflower, carrots, and broth. Bring to a boil, then reduce heat and simmer for 15–18 minutes, until the vegetables are very tender.
  4. Blend the soup until smooth, using an immersion blender or working in batches in a regular blender.
  5. Stir in the shelf-stable milk and warm through. Season with salt and pepper.
  6. Serve topped with fresh cilantro if using.

Notes & Substitutions:

  • Renal note: This recipe works well as written for most kidney-friendly diets. Check with your RDN if you have specific limits.  
  • Substitutions:  no curry powder? A mix of ½ teaspoon turmeric and ½ teaspoon cumin works in a pinch. 
  • Storage:  keeps in the fridge for up to 4 days, or freeze for up to 3 months.
