Ingredients:
- 2 cups carrots, sliced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- Black pepper, to taste
- 2 cups cooked lentils
- 2 cups cooked quinoa or brown rice
- Optional: chopped cilantro or parsley
Instructions:
- Preheat oven to 400°F.
- Toss carrots with olive oil, cumin, paprika, and pepper.
- Roast on a baking sheet for 25–30 minutes, until tender.
- Warm lentils and grains if needed.
- Assemble bowls with grains, lentils, and roasted carrots.
- Garnish with herbs if using.
Notes & Substitutions:
- Swap lentils for black beans or chickpeas
- Add a spoon of yogurt or avocado for creaminess
