When the kids are home for the holidays, slow mornings suddenly feel a little more magical—and a lot hungrier. These banana pancakes with warm cinnamon-apple topping turn breakfast into a cozy tradition, giving everyone a reason to wander out in their pajamas and gather in the kitchen. Made with whole wheat flour, bananas, and gently sweet apples, this recipe offers a festive treat that still fits a feel-good, balanced start to the day. Stack them high on a big platter, spoon the tender apples over the top, and let everyone linger a little longer around the table before the holiday bustle begins.

Total Time: 45 min
Servings: 4

Ingredients:

  • 3 apples
  • 3 tablespoons sugar
  • 1/4 cup water
  • 2 eggs
  • 1 1/2 cups low-fat or fat-free milk
  • 1 tablespoon honey
  • 3 tablespoons vegetable oil (or cooking oil of choice)
  • 3/4 cup whole wheat flour
  • 3/4 cup flour (all-purpose)
  • 2 teaspoons baking powder
  • 2 bananas
  • 1 teaspoon cinnamon

Instructions:

Apple Topping:

  1. Wash apples, remove cores, and slice thinly with peel still on.
  2. Combine apples with the sugar, cinnamon, and water.
  3. Cook in a skillet for 10 minutes. Set aside while making pancakes.

Pancakes:

  1. Beat eggs. Beat in milk, honey, and oil.
  2. Add flour and baking powder.
  3. Slice bananas and add to the mixture.
  4. Coat a large, non-stick frying pan or griddle with non-stick cooking spray. Warm the pan over medium heat for 2 minutes.
  5. Spoon 1/4 cup of the batter onto the heated griddle for each pancake (adjust more or less depending on pancake size).
  6. Cook until the tops are bubbly and the pancakes are dry around the edges. Flip and cook for 2-3 minutes or until golden on both sides. Place pancakes on a platter and keep warm.
  7. Repeat steps 5 and 6 until batter has been used, using more nonstick cooking spray as needed.

Notes:

  • Pair this dish with a side of plain yogurt or a glass of low-fat milk to add protein and balance the natural sweetness from the bananas and apples for a more complete breakfast
