Tuna & Cauliflower Rice Bowl
1:00

Cauliflower does a convincing impression of rice once it’s finely chopped and cooked in a hot pan, and it makes a great base for a lunch that doesn’t need much else. This bowl tops warm cauliflower rice with a bright mix of canned tuna, cherry tomatoes, and cucumber, all lightly dressed with olive oil and lemon. It’s filling without being heavy, and it comes together with almost no cleanup.

Why This Recipe Works

  • Cauliflower rice is a low-carb swap that still feels like a full meal. It takes on whatever flavor you cook it with, and using it instead of grains helps keep this lunch easier on blood sugar.
  • Tuna is a lean, ready-to-eat protein that needs no cooking. Straight from the can, it turns this bowl into a real meal in the time it takes to warm the cauliflower rice.
  • Cherry tomatoes and cucumber add crunch and hydration for almost no effort. Both go in raw, which keeps prep quick and the bowl feeling fresh.

Ingredients:

  • 1 head cauliflower, riced (grated or pulsed in a food processor)
  • 2 cans (5 oz each) tuna in water, drained
  • 1 cup cherry tomatoes, halved
  • 1 Persian cucumber, diced
  • 3 tablespoons olive oil, divided
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Optional: fresh herbs, such as parsley or dill

Instructions:

  1. Rice the cauliflower by grating it or pulsing the florets in a food processor until they resemble rice.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the cauliflower rice and cook for 5–6 minutes, stirring often, until tender. Season with salt and pepper.
  3. In a bowl, combine the tuna, cherry tomatoes, cucumber, remaining olive oil, lemon juice, and garlic. Season with salt and pepper.
  4. Divide the warm cauliflower rice among bowls.
  5. Top with the tuna and vegetable mixture. Add fresh herbs if using and serve.

Notes & Substitutions:

  • Renal note:  This recipe works well as written for most kidney-friendly diets. Check with your RDN if you have specific limits. - Substitution: no cauliflower on hand? This works just as well over a bed of chopped cello lettuce for a cold version.
  • Storage: Keeps in the fridge for up to 2 days; the cauliflower rice is best reheated gently, as it can soften further over time.
